Turkey Taco Lettuce Wraps

My husband and I always joke/complain about the fact that everything that tastes good seems to be bad for you or fattening. Cheese, chocolate, fried food, you name it. But these taco lettuce wraps are an extreme exception to that rule. These are so good, and you would never even realize that you’re eating something healthy! They’re low in carbs, high in protein, and are loaded with all things good for you! (With a little cheese and smidge of sour cream, because, I am who I am.)
Alright, so first thing’s first.
Taco Fillings
There are unlimited ingredient options when you’re making tacos, here are some of the most common ones:
- Vegetables: Tomatoes, Red Onions, Corn.
- Fruits: Avocado, Jalapenos, Black Olives.
- Cheeses: Monterey Jack, Cheddar, Pepper Jack, Queso, Fontina.
- Other: Sour Cream, Black Beans, Cilantro, Black Olives, Guacamole, Salsa, Hot Sauce, Enchilada Sauce, Tortilla Strips, Pico De Gallo, Refried Beans.
Best Lettuce for Lettuce Wraps
- Romaine lettuce leaves are larger in size and hold up nicely for taco wraps, especially if you use two.
- Butter Lettuce works well for these PF Changs Chicken Lettuce wraps, where the filling is lighter.
- Iceberg lettuce makes a nice alternative and multiple lettuce leaves can also be used.

Storing Leftovers
- The leftover turkey/black bean mixture should be kept in an airtight container and used within three days.
- Taco salads are an alternative way to use up leftovers. Chop up the romaine and top it with your leftover toppings and reheated turkey/black beans.

Turkey Taco Lettuce Wraps
Ingredients
- 1 lb. ground turkey
- 3/4 cup chicken broth, can sub water
- 2 Tablespoons Taco Seasoning
- 15 oz. black beans, drained and rinsed
- 2 Roma tomatoes, diced
- ½ cup red onion, diced
- 1/2 cup Sour Cream
- 1 ½ cups Cheese, shredded, see notes
- 8 romaine lettuce leaves, (each wrap uses 2 overlapped leaves)
- Fresh Cilantro, Roughly chopped, to garnish
Instructions
- Cook and crumble the ground turkey in a pan over medium heat for 15 minutes, until cooked through.
- Add taco seasoning and ¾ cup chicken broth. Bring it to a boil, then reduce the heat to medium-low.
- Add the black beans and cook until heated through, about 5 minutes.
- Stack two lettuce leaves on top of one another for each wrap.
- Spoon ground turkey and black bean mixture into each lettuce wrap and sprinkle with remaining toppings and a dollop of sour cream. Top with fresh cilantro and serve!

I measured one serving (one taco) to be as follows (ands it’s way off what is listed above for nutrition facts)
2.5 oz Turkey
2.5 oz beans
1 oz cheese
1.5 Tbs sour cream
2 Romain leafs
2 chopped cherry tomatoes
This equals to be 49g carbs, 14g fat, 33g protein, 455cals
Hey Brittany, so the nutrition facts are based on a program that takes the entire recipe and divides it by the number of servings. (4, in this case). I just checked the first ingredient on your list, you used 2.5 ounces of turkey but each serving actually has 4 ounces of turkey, so that right there will create a difference.
I made these with ground chicken instead of turkey but the black beans were incredibly hard. Did I miss a step? Should the beans have been cooked before adding them to the mixture?
Hi Nya, yes, you missed that step unfortunately. Step #3 indicates to cook the black beans in the skillet after you’ve cooked the meat. Next time! 🙂
Im sorry, my question was in reference to cooking them PRIOR to step 3. Adding them to the skillet uncooked just seemed wrong. Forgive me if I sound silly, I am completely new at this cooking thing.
It actually doesn’t sound silly at ALL! I’m going to update the instructions to mix them into the ground beef at the end of cooking it! You’re right, that’s better! Thank you for mentioning it!

These lettuce wraps were so easy to make and super delicious! Not to mention the filling is great in salads and wraps and so much more! Also, you should try adding thinly sliced radishes for they add a little extra kick of spice and crunch.
