These make ahead breakfast sandwiches make busy mornings a snap! Pull them from the freezer and you’ll enjoy a hot breakfast in just 3 minutes. Enjoy these English muffins with sausage, bacon, fluffy eggs, and cheese!

I love to prepare a whole stack of these on Sunday nights before a busy work week. I thank myself every single day after that.
BONUS: This is a very budget friendly breakfast. Last time I got breakfast at McDonald’s, I couldn’t believe how much it cost.
Ingredients
- Nonstick Cooking Spray
- Eggs
- Whole Milk
- Salt/Pepper
- Bacon
- Sausage Patties
- Butter
- English Muffins- I like to get them from the bakery section so they’re super fresh. (And a little larger.)
- American Cheese
Wrapping Frozen Sandwiches in a Damp Paper Towel
- The purpose of the damp paper towel is to prevent the sandwiches from becoming tough when microwaved and helps for more even heating.
- If you don’t use the paper towel, I would recommend reheating on 50% power, covered. It may take longer to heat this way.
Breakfast Sandwiches For a Crowd
This is a great breakfast recipe for feeding a crowd. Feel free to make them fresh and serve them right away for a group.
Assemble the sandwiches as you normally would and pop them back in the oven until the cheese is melted! (Perhaps placing a layer of foil over the English muffins if you don’t want the tops to toast anymore.)

Make Ahead Breakfast Sandwiches
Ingredients
- Nonstick cooking spray
- 10 large eggs
- 1 cup whole milk
- 1 teaspoons salt
- 1 teaspoon pepper
- 6 slices bacon, cut in half
- 3 sausage patties
- 4 Tablespoons butter, melted
- 6 English muffins*
- 6 slices American cheese, (Velveeta slices work well)
Instructions
- Preheat the oven to 375 degrees.
- Lightly coat a 9 x 13 inch baking pan** with nonstick cooking spray. Add the eggs, milk, salt, and pepper and whisk until well combined. Bake for 20-25 minutes, until firm.
- Meanwhile, place the bacon and sausage on a large baking pan and bake for 10-15 minutes, until they’re cooked through and the bacon is crispy. Dab the excess grease off once finished and set them aside.
- Slice the English muffins and place on another large baking sheet. Brush butter evenly over the top of each slice, and bake for 5-8 minutes, or until crisp and slightly toasted on the top.
- Cut the baked eggs into 6 squares of equal size.
- Place an egg square on the bottom half of each English muffin, then either 2 bacon halves or one sausage patty, followed by a slice of cheese, and finally the English muffin top.
- Take 6 paper towels and dampen each one with water, wringing out the excess water. Wrap each breakfast sandwich in the damp paper towel, and then in wax paper. Place them in labeled freezer bags, (or label each individual sandwich).
- Freeze for up to a month.
- To Heat: Remove each sandwich from the wax paper but leave it loosely in the paper towel. Microwave for 40 second increments, flipping in between, until warmed and heated through.

Do we assemble and wrap/store while everything is still hot? Or wait until cooled down to assemble/wrap/store?

Could I Make this the night before, put in a foil dish pan, cover with aluminum and reheat in the oven the next morning? Just wondering if the fridge would dry out the bread? Thanks!
Hi Meagan, it might be better to wrap each sandwich individually in foil, for overnight storage and for baking!
These looked amazing and were super easy to make. I tried reheating one in my microwave today, and the cheese melted everywhere and my English muffin became soggy. Did I use too much moisture in the paper towel? I feel like a dry paper towel would have done just fine, and less heating time as well?
Hi Laura! I’m so sorry for the delay, I’ve been out of commission with the flu! So I think the paper towel was too wet, it needs to be wrung out well and just damp. This helps keep the bread nice and soft/moist, otherwise it can end up being as hard as a rock. I use this method when I am heating up frozen hot dog/burger buns, bagels, etc… and it works really well. You can also put your microwave on 50% power to ensure that it doesn’t get too hot when reheated, and you can do 40 second increments, flipping in between each, until heated through. I hope that helps! 🙂
What if I don’t have wax paper? Can I use foil ?
Hi Jess! I’m not sure if the foil would stick to the damp paper towel, I suspect it might. So you could wrap the sandwiches in just foil and then reheat in a moist paper towel later, that should work!
What is the best way to warm these up without a microwave? I have a toaster oven and an oven.
I would reheat them in a 350 degree oven for 20-25 minutes!
Looks like I’m late to the party, but I still have a question that I couldn’t find an answer to already. What about real cheese, like cheddar, instead of American or Velveeta?

Im making a bunch of foil meals and frozen pre cooked foods for hunting…im wondering if anyone has tried to warm up over a fire, on a grill or griddle, or any other camping style heat source? If so, any advice? (Which heat, how long, directly or in foil…ect

The biggest problem I have with making DIY “sausage mcmuffins” is that no one makes English muffin-sized sausage patties. And making your own from ground pork is way too involved for something like this IMO. 🙁
I understand! You could always try cutting the sausage patties into strips and using as much as you want or as little as you want on each sandwich. Sometimes I’ll even cut the sausage up into little cubes!
I put a sliced piece of sausage between wax paper and press with a cutting board until it’s the size I need. Works best when the sausage is just out of the fridge.

I’ve added cooked bulk sausage to the egg mixture before baking without any problems. Or, I’ve cut the small patties in half and used them as two half moons with a space between.
