Chicken Stew

This Chicken Stew recipe is loaded with hearty, rustic flavor. The savory broth has a perfect blend of seasonings with potatoes and fresh vegetables. The chicken is flavorful and juicy, and it’s easy to customize. It’s COZY in a bowl!

Be sure to pair this with my crusty, airy, No Knead Bread for dipping!

Chicken Stew

There is nothing cozier than a piping hot bowl of this hearty Chicken Stew. I absolutely love the rustic vibes here, the broth almost has a gravy element to it, can you think of anything better? Serve this with my cheddar bay biscuits or buttermilk biscuits and you’ve got it made! 

The techniques used in this recipe ensure that we are getting the most flavor out of every single ingredient. (Especially in how we handle the chicken, more on that below!)

The seasoning combination is just perfect, and you can add in any vegetables that you have on hand! Be sure to check out my PRO tips below, I bet you’ll learn something! 

How to Make It

Season and sear the chicken for 3-4 minutes per side, set aside. Deglaze the pot with white wine and reduce by half.

Add butter, onions, carrots, and celery and soften for 5 minutes. Add the garlic, hot sauce, Worcestershire sauce, and seasonings and cook for 1 minute.

Add flour and cook for 2 minutes. Add chicken broth and heavy cream in small splashes, stirring continuously. Bring to a boil, then reduce to a gentle simmer. Add the chicken back and simmer gently for 45-60 minutes.

Remove the chicken and let it rest. Add the potatoes and cook until fork tender. Shred or dice the chicken and add it back to the stew. Optional: Add a few drops of gravy master to add a slightly darker color to this stew.

Serve with cheddar bay biscuits or buttermilk biscuits!

Using Bone-in Chicken

  • Bone-in chicken breast or thighs is a great way to infuse flavor into the stew. The flavor that’s housed inside the bone spreads out into the meat, leaving the stew with a deeper, more robust flavor.
  • We’ll quickly sear the chicken in the soup pot first. This gives the outside a golden crust for enhanced flavor and texture. It also leaves “fond” on the bottom of the soup pot, which we deglaze and work into the broth for maximum flavor. 
  • The chicken then finishes cooking slowly in the broth for super juicy/tender results, after which point it’s removed and shredded or diced.

The Best Potatoes for Stew

  •  Red Potatoes are best for stews as they have less starch content, which allows them to hold up better. Yukon Gold would be my second choice, and Russets (the starchiest), would be my third. 

It’s Meant for the Stove Top

  • This recipe is designed around using various temperatures on the stove top in order to sear the chicken, deglaze the skillet/reduce the wine, create a roux, blend the flavors, and reduce/concentrate the broth. These techniques can’t be replicated in the crock pot and the outcome would be different than what is shown here.

Pro Tips

  • Flavor Enhancers: The Worcestershire sauce, hot sauce, and mustard powder in this recipe are used as flavor enhancers and can’t be tasted outright. I use Frank’s Hot Sauce.
  • Wine: Pinot GrigioChardonnay, or Sauvignon Blanc are great in this recipe. Chicken broth can be used if you don’t cook with wine.
  • Frozen peas, corn, or green beans can be stirred in 10-15 minutes prior to serving if desired.
  • For even more flavor/umami, add the rind from a block of Parmesan or Romano cheese when you simmer the stew. If any remains at the end of cooking, it can be discarded.
  • A few drops of Gravy Master or Kitchen Bouquet can add a slightly darker color to this stew if preferred, but it’s not necessary!
  • My Ranch Oyster Crackers make a great topping for soups and stews, or pair this with my crusty, airy, No Knead Bread for dipping!

Storage

  • Store in an airtight container and refrigerate for up to 3 days or freeze for up to 3 months. 
  • Be sure not to overcook the potatoes if you plan on freezing leftovers so that they’re not crumbly when reheated.

Chicken Stew

This Chicken Stew has juicy chicken in a savory broth with a perfect blend of seasonings, potatoes, and vegetables. It’s easy to make on the stove top and is full of homemade flavor!

Ingredients

Chicken

  • 1-2 tablespoons olive oil
  • Salt/Pepper
  • 2 teaspoons Italian seasoning
  • 2 lbs. bone-in chicken breast or thighs, see notes

Stew

  • ½ cup dry white wine, see notes
  • 5 tablespoons butter
  • 1 medium yellow onion, diced
  • 1 ½ cups carrots, diced
  • 2 ribs celery, diced
  • 4 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 1/3 cup flour
  • 6 cups Chicken Broth
  • ½ cup heavy cream, optional
  • 1 chicken bouillon cube, or 1 tsp. better than bouillon
  • 1.5 lbs. red potatoes, washed/dried
  • 2-3 drops Gravy Master, optional, see link in notes.

Seasonings

  • 1 teaspoon dried parsley
  • ½ teaspoon EACH: dried basil, rosemary, thyme, mustard powder, onion powder
  • ¼ teaspoon EACH: ground sage, salt, celery salt
  • 1/8 teaspoon pepper

Instructions

  • Prep Work: Measure out ingredients before beginning, it makes the process easier and more relaxing. (Don't cut the potatoes yet.)
  • Pat the chicken dry and season each side with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large Dutch oven or soup pot over medium-high heat. Make sure the pot is sufficiently heated so that the chicken sears right when it hits it. Add the chicken and cook for 3-4 minutes/side, then remove and set aside. (We want the middle to be uncooked.) Don’t cut up the chicken yet.
  • Turn off the heat. Add the wine and set the heat to medium. Use a silicone spatula to “clean” the bottom and sides of the pot. Let the liquid reduce by half, about 4 minutes.
  • Add the butter and let it melt. Add the onions, carrots, and celery. Toss to coat. Soften for 5 minutes.
  • Add the garlic, hot sauce, Worcestershire sauce, and seasonings. Cook for 1 minute.
  • Add the flour and stir to combine. Cook for 2 minutes, or until it begins to turn a golden brown.
  • Add the chicken broth in small splashes, stirring continuously. Be sure to do this slowly. Add the heavy cream in the same manner. Next, add the chicken bouillon.
  • Bring the stew to a boil, then reduce to a gentle simmer. Add the whole pieces of chicken back along with any juices from the plate.
  • Cover partially and let it bubble very gently, partially covered, for 45-60 minutes. It will reduce, thicken, and concentrate. Don’t let it reach a boil or the chicken will be tough/dry. (A few gentle bubbles are good.) Stir occasionally as it cooks.
  • Use kitchen tongs to remove the chicken and set aside on a plate. Let it rest. Cut the potatoes into 3/4-inch chunks and add them to the stew Simmer until fork tender, about 20 minutes.
  • Dice or shred the chicken and discard any bones. Return it to the stew. Optional: Add a few drops of gravy master to add a slightly darker color to this stew. Taste and add any additional seasoning if desired. Serve with cheddar bay biscuits or buttermilk biscuits!

    I am looking to make this and freeze it. Do you have a recommendation on reheating? Are there different reheating methods for your other freezer friendly meals? I love cooking but we usually eat fresh and refrigerate leftovers. I haven’t done much as far as freezing meals so my experience in that area is lacking. We are getting ready for baby to arrive at the end of March so are looking to have a few freezer meals ready to go. Thanks so much! 

    • Hi Marissa! You can definitely freeze this, for at least 3 months. Be sure not to overcook the potatoes as those can become a little crumbly when they’re reheated if they were overcooked the first time. Other than that, you’re good to go! I usually just reheat this one in the microwave, either from frozen, or after it’s thawed in the fridge overnight. I freeze them in these food storage containers. Congratulations on the baby!! 🙂

  5. You’ve outdone yourself once again, this soup/stew is totally restaurant quality! I followed exactly and let it sit in Dutch oven overnight then served it last night and OMG!!! My husband’s fussy..but hasn’t eaten much in 2+ months, lost 32 lbs. Couldn’t do savory or he’d be nauseated or sick. Dr. Put ihim on antibiotic and last night he ate all your soup and was in heaven..felt so much better! Other than my chicken being too dry..I had big breasts and did 31/2 min. Each side. But now I’ve got it. I only added a bit more cream toard end. Thank you again, I just love your recipes, instructions and notes!!

  8. I knew it when I saw your post for this recipe that it was going to be amazing. I made it last night for my family and it surpassed my expectations for sure. I can’t believe how flavorful this stew is. I used Sauvignon Blanc as you suggested for the wine. I shredded the chicken after cooking it and I even added the rind of my Parmesan Cheese wedge like you said. We haven’t finished the cheese but since I had it, I sliced off the end for the stew. Everything together made this soup absolutely amazing. My family cleaned the pot. I wish I had leftovers today but it looks like I’ll have to make it again very soon. We had fresh rolls with it which we all dunked in the stew. Just fabulous! Thank you!

  9. Made this tonight for our cold weather here in Arizona. It was really delicious. It was not thick so added a little flour and water mixture. Made cheddar Bay biscuits with it. So good. Will make again.

  10. Fantastic flavour! Exactly what I’ve come to expect from Stephanie; no fail recipes every time. I accidentally used 3 cups of boxed beef stock but it was still so good! I didn’t have bone in chicken breast or thighs but I did have 3 cups of homemade chicken stock so that made up for the bone flavour. I added quite a bit of salt since both the stocks that I used were unsalted. It was a perfect night for a stew and it smelled heavenly!
