These light & fluffy Yogurt Pancakes are perfectly golden and so easy to make. They have a sweet and creamy flavor that sets them apart from your typical pancake!
In a large bowl, combine the flour, sugar, baking soda, and baking powder until well-combined.
In a medium bowl, add 2 cups of yogurt and the water. Whisk the eggs vigorously in a small bowl until completely uniform in color. Incorporate as much air into the eggs as possible to achieve the fluffiest pancakes. Add the whisked eggs to the yogurt bowl until just combined, then combine it with the flour mixture until just combined. Try not to over-mix. If the mixture is too thick and moisture is needed, begin by adding small amounts of additional yogurt to the mix until desired consistency is obtained.
Heat a griddle or large, nonstick skillet to medium heat. Coat with butter or nonstick cooking spray. (I prefer butter.)
Drop 1/3 cup of batter onto the heated surface. Once the top begins to bubble, wait an additional 30 seconds or so, then flip and cook for an additional 1-2 minutes, until each side is golden brown.
Repeat with the remaining batter, reapplying more butter or nonstick spray in between each pancake. You may need to decrease the heat to medium-low about halfway through.
Serve with butter, Special K, fresh fruit, and enjoy!
