Homemade banana oat bread waffles put a fun twist on your average peanut butter and jelly sandwich! This will be something your kids will be excited to take to school!
Heat the waffle iron and spray lightly with nonstick cooking spray.
Add the waffle mix to the waffle iron and cook according to waffle iron instructions. (My waffle iron rotates and cooked for about 3 minutes on each side.)
Use a fork to carefully remove the waffle and place it on a cooling rack.
Once cooled, store in an airtight container at room temperature until ready to assemble sandwich.
To assemble, get as creative as you want. This recipes makes a thick waffle. Another sandwich alternative is to slice each waffle quarter in half and spread the peanut butter and jelly in the middle! Or, simply utilize the waffle indentations to place your peanut butter, jelly, and blueberries!
