You guys, my daughter Taylor is finally old enough to help me with breakfast! This is a moment! We had an entire weekend dedicated to this, and it was awesome. We ran to Target to gather the ingredients (she’s obsessed with Kellogg’s® Special K cereal, by the way, and puts it on everything), then we looked at pictures of pancakes. Finally, she got to put the ingredients into the bowl (with a bit of help from mama), and she was so proud of herself.

We had almost everything we needed at the house already, but yogurt is her new obsession so we had to go get more. We went with Light & Fit® Original Greek Strawberry Cheesecake because cheesecake yogurt in a pancake is the best thing you’ll ever eat.

Can I take a moment to just let you know that they had this free “adopt a pet” thing going on at Target?! She got to pick out a puppy and a leash for free, and it made her entire life. She named the dog “woof woof”, and she didn’t let go of him for the entire day. Melt my heart, why don’t you?

Okay, so back to breakfast-making. We bought a ton of Light & Fit® Original Greek yogurt at Target, so naturally she had to sit herself down, drop half of a box of Kellogg’s® Special K Original cereal into her yogurt cup, and have herself a snack. That girl, she cracks me up.

Well at least now I could count on her not to eat the yogurt that we needed for the actual pancakes. And let me just say, she pours flour into a bowl like a champ! Our time spent watching cooking shows together is paying off!

By the way, I’m kind of taking her lead on something. Kellogg’s® Special K Original cereal is, in fact, good on almost anything! It makes the most fantastic topping on these pancakes! It’s packed with a serious crunch. I might even bread chicken with this stuff sometime—it’s amazing!

Can you Freeze Pancakes

Pancakes can easily be frozen and enjoyed for breakfast another day! Simply place some parchment paper on a baking sheet and line the pancakes on top without touching each other. Place another sheet of parchment on top and freeze for a few hours. Remove them from the freezer and stack them up in a labeled freezer bag.

Reheating Frozen Pancakes

Oven Method: Line a baking sheet with parchment paper and top with frozen pancakes. Add foil on top of the pancakes and bake at 350 degrees for 10-15 minutes.

Microwave Method: Heat a stack of frozen pancakes in the microwave for approximately 1 ½- 2 minutes.

How Long are Frozen Pancakes Good for

Frozen pancakes are best if used within 1-2 months.

  • 2 cups all-purpose flour
  • 2 Tablespoons sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 eggs
  • 3 cups Dannon Light & Fit® Original Greek Strawberry Cheesecake yogurt separated*
  • 1/4 cup water
  • 1 ½ cups Kellogg's Special K®
  1. In a large bowl, combine the flour, sugar, baking soda, and baking powder until well-combined.
  2. In a medium bowl, add 2 cups of yogurt and the water. Whisk the eggs vigorously in a small bowl until completely uniform in color. Incorporate as much air into the eggs as possible to achieve the fluffiest pancakes. Add the whisked eggs to the yogurt bowl until just combined, then combine it with the flour mixture until just combined. Try not to over-mix. If the mixture is too thick and moisture is needed, begin by adding small amounts of additional yogurt to the mix until desired consistency is obtained.
  3. Heat a griddle or large, nonstick skillet to medium heat. Coat with butter or nonstick cooking spray. (I prefer butter.)
  4. Drop 1/3 cup of batter onto the heated surface. Once the top begins to bubble, wait an additional 30 seconds or so, then flip and cook for an additional 1-2 minutes, until each side is golden brown.
  5. Repeat with the remaining batter, reapplying more butter or nonstick spray in between each pancake. You may need to decrease the heat to medium-low about halfway through.
  6. Serve with butter, Special K, fresh fruit, and enjoy!
