Ingredients

  • 4 pork chops
  • 1 oz. packet dry Ranch Dressing
  • 10.5 oz. cream of chicken soup 1 can
  • 3/4 cup sour cream
  • 1/4 cup diced yellow onion
  • 1 cup baby carrots
  • 4 medium red potatoes
  • 3/4 cup parmesan cheese at room temperature
  • 1/4 cup milk at room temperature
  • 2 tablespoons butter at room temperature
  • Salt/Pepper to taste

Instructions

  1. Mix ranch dressing, soup, sour cream, & diced onions together and add to crock pot.
  2. Add pork chops and baby carrots. Cover pork chops with mixture.
  3. Cook on high for 2 hours or on low for 3-4.
  4. Prepare the potatoes about 30 minutes before you're ready to eat.
  5. Place the potatoes in salted cold water and allow them to come to a boil from there. This allows the potatoes to gradually increase in temperature, which ensures that the outside does not cook faster than the middle of the potato. .
  6. Take the parmesan cheese, butter, and milk out now so that they are at room temperature when you use them.
  7. Boil the red potatoes for about 25 minutes.
  8. Drain water and mash the potatoes Stir in butter, 1 cup parmesan cheese, and milk.
  9. Place Pork Chops and potatoes on serving plate, drizzle with extra ranch sauce that remains in crock pot. Serve & enjoy!
