Chocolate Chip Cheesecake Brownies

Who said making brownies from scratch had to be hard? I made these last Friday night, we were having my sister in law and her hubsta over the following day and I wanted something that was easy to serve. I was planning on making dinner and didn’t need dessert to throw me off. These were absolutely PERFECT.

Ingredients

  • 8 oz. cream cheese, softened
  • 3/4 cup white sugar
  • 3 large eggs
  • 2 cups semisweet chocolate chips
  • ¼ cup butter
  • 2/3 cup flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350 degrees
  2. Combine cream cheese with ¼ cup of the sugar along with 1 egg in a mixing bowl and beat until relatively smooth. Stir in 1 cup of chocolate chips and set aside.
  3. In a heatproof mixing bowl, add the ¼ cup butter and 1 cup chocolate chips. Add some water to a saucepan and bring to a boil. Turn the heat off and set the mixing bowl on top. Mix until melted together, then add 2 eggs and ½ cup sugar. Sift in the flour, baking powder, and salt and stir until evenly blended.
  4. Grease a 9x9 inch baking pan and pour half of the melted chocolate mixture on the bottom and spread evenly. Add the cream cheese mixture (it’s okay if it doesn’t coat the bottom layer completely- it won’t look perfect now but it will later!) Then top with remaining chocolate mixture. Swirl it around with a knife to make it look NEAT- it gives it a marble pattern ;)
  5. Bake in the preheated oven for 25-30 minutes, until the top is slightly crinkled and edges are pulled away from the pan. Let cool completely prior to cutting.
