Ingredients

  • 4 Tablespoons butter
  • 3 medium onions thinly sliced
  • 12 oz. Reames Homestyle Egg Noodles can be found in the frozen section
  • 1 cup sour cream
  • 2 (10.5 oz.) cans cream of chicken soup
  • 1 cup chicken broth separated
  • 1 cup grated mozzarella
  • 2 cups rotisserie chicken diced
  • 1 cup crispy fried onions

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large, oven-safe skillet, melt the butter and add the onions. Simmer over medium heat, stirring occasionally, for about 20 minutes, until the onions begin to turn brown and caramelize.
  3. While the onions caramelize, cook the egg noodles in a separate pan according to package instructions. Drain, set aside.
  4. Add the sour cream, cream of chicken soup, and half chicken broth. Use a silicone spatula to stir in the egg noodles. Add half of the mozzarella cheese and the chicken.
  5. Stir until the cheese is melted. If desired, add up to ½ cup more chicken broth.
  6. Top with the remaining ½ cup mozzarella cheese and bake for 10 minutes.
  7. Top with the crispy fried onions and bake for 5-10 more minutes, until the top is golden. Serve and enjoy!
