Disney’s Le Cellier Cheese Soup

Le Cellier's thick and creamy cheddar cheese soup topped with crispy crumbled bacon and green onions. This recipe is straight from the Chef Mickey Cookbook!


  • 1/2 lb. bacon, plus more for garnishing
  • 1 medium red onion, diced
  • 3 celery ribs, diced
  • 4 Tablespoons butter
  • 1 cup Flour
  • 3 cups chicken stock, low sodium
  • 4 cups milk
  • 1 lb. grated white cheddar cheese
  • 1 Tablespoon Tabasco sauce
  • 1 Tablespoon Worcestershire sauce
  • 1/2 cup warm beer, Dark Ale is best
  • Chopped scallions to garnish


  • In a 4 or 5 quart dutch oven, cook the bacon until it's crispy. Remove it from the pot, crumble once cooled, and set aside.
  • In the same pot, leave the bacon drippings and add the butter, celery, and onions. Saute until the onions are soft and translucent, about 5 minutes.
  • Whisk in the flour and stir constantly for about 4 minutes.
  • Gradually add the chicken broth and bring it to a boil, as you continue to whisk.
  • Reduce the heat, add the milk and beer, and simmer for about 15 minutes. Do not boil the soup once the milk has been added.
  • Turn off the heat and mix in the cheese, Tabasco sauce, and Worcestershire sauce.
  • Garnish with additional crumbled bacon and green onions and serve!
