“I’m gonna level with you, I’ve been in a 100-degree attic all day so my stomach is really weird and nothing sounds remotely good to eat right now except for like, a cold carrot” –My husband’s text message to me yesterday afternoon. (Except he sent about 74 botched up texts and typos to make that point.)

Me: “Sooooo…. I guess you don’t want the pork dinner that I have in the slow cooker right now?”

“Um, no. I better not.”

“What about a grilled panini with mozzarella sticks, tomatoes, and basil?”

“Actually that sounds really good.”

Thank you, once again, Farm Rich. I load up on their stuff anytime I go to Hannaford. Their heat-and-eat snacks and appetizers save me on a weekly basis. I love using their Meatballs for quick pasta bakes during the week, and I’m 100% addicted to their Loaded Potato Skins. They are my snack and dinner savior when we’re pressed for time. (Which is always.)

By the way, their Avocado Slices are to die for. They are real, ripe, refreshing avocados with a super flavorful crunchy coating and Jalapeño Ranch dip (right in the box)! Did you just drool too?


The products are made with wholesome ingredients and all you have to do is pop Farm Rich snacks in the oven or the microwave, and you are ready to eat in minutes, it’s amazing. I had some unexpected guests drop by last Sunday and I was basically kissing these boxes. Anyway, on another note…

August is National Sandwich Month!

I don’t know who comes up with these food-themed days and months, but I want to shake their hand. You can’t just let National Sandwich Month pass by without making some sort of cool sandwich concoction, and once you taste these super-crunchy, cheese-filled Farm Rich Mozzarella Sticks in a grilled panini with tomatoes and basil, you will be hooked. My husband told me that he wants one every day now. Hey, fine by me man, fine by me.

Will you just look at that melted mozzarella?! This panini screams summer too. You can’t beat the tomato/basil combo, especially if you have them in your garden. Talk about heaven.

Would you judge me if I told you that I bought a panini press just to make these sandwiches? Because, I did. Worth every penny.

Caprese Panini

Extra crunchy, cheese-filled mozzarella sticks inside a freshly grilled panini with tomatoes and basil. 

  • 2 slices panini bread
  • 2 Tablespoons olive oil
  • 1 Roma tomato
  • 4 Farm Rich Mozzarella Sticks
  • 6 fresh basil leaves
  1. Bake the Mozzarella Sticks in the oven at 450 degrees for approximately 9 minutes.
  2. Brush 1 side of each piece of bread with olive oil. Place it oil-side-down on a panini press.
  3. Slice the Roma tomato, dab the excess moisture with a paper towel, and add it to the top of the bread slice.
  4. When the baked Mozzarella Sticks are cool enough to handle, slice them in half and place them cheese-side down on top of the tomatoes. Top with basil, then add the second slice of bread, oil-side-up.
  5. Press the panini lid down and cook until the top is golden-brown, about 3-5 minutes.
  6. Use a spatula to carefully remove the panini, slice it in half, and serve with Farm Rich Avocado Slices if desired. Enjoy!
