So, this bacon grilled cheese? This was my idea. The touch of sriracha? My husband’s. Well played hubs, well played. This has to be, hands-down, the best grilled cheese I’ve ever had. I don’t usually give him credit for these kinds of things you know. I much prefer when I am the genius mind behind my recipes. And my husband does tend to put sriracha on like, everything, so I was hesitant to add this to the list at first. But I’m telling you. It’s dynamite man.


So. Do you know how to make a grilled cheese?

No, seriously. I have been doing it all wrong for years. I’m not kidding! Grilled cheese is something that I never bothered to really “dig into” as far as technique, I mean, it’s bread and melted cheese. How hard can it be? Turns out though, if you follow a few simple steps, it can make all the difference. Let’s get into it.

1.) Use Mayo on the bread instead of butter. 

(Wait. Grilled Cheese with mayo?) Okay I’m not normally an advocate for mayonnaise, I’ll put that out there right now. But spread a little bit of mayo over your bread instead of butter. Why, you ask?

  • It spreads easier, leaving your bread perfectly intact.
  • Mayonaise has a higher smoke point. (It won’t burn as easily.)
  • It adds a creamier flavor to the bread and browns nicely.

2.) Let the cheese melt on top of each piece of bread first, while the bottoms brown. Then flip one piece of bread onto the other. 

I don’t know about you, but I used to always assemble the grilled cheese right away, and would always have a hard time getting that cheese to melt by the time the bread was nice and browned. This method exposes the cheese to more heat, allowing it to melt faster. Not to mention, with both pieces of bread browning at the same time, there’s no need to flip, and the sandwich is ready faster!

3.) Add bacon. Because, it’s bacon.

So, I mentioned that my husband adds sriracha to everything. I have to give him credit for one other creation that I highly recommend. Scrambled eggs + sriracha. (And cheese. Duh.) Hell add bacon while we’re at it. It’d be the best egg scramble everrrrr.

  • 8 strips of bacon (I prefer thick-cut, quality also goes a long way here)
  • 8 slices fresh quality bread (I used Panini bread from my grocery store bakery section)
  • 3 Tablespoons mayonnaise
  • 4 Tablespoons Sriracha Sauce
  • 4 Tablespoons butter
  1. Begin by cooking the bacon in a large skillet, (preferably cast iron), over *low* heat. Low and slow is the way to go with bacon. Use tongs to turn the bacon over once it begins to curl. Do this every so often for even cooking.
  2. Once the bacon is crisp on each side, set it aside on a plate and break them in half once cool enough. Leave the bacon drippings in the pan, add 1 Tablespoon of butter, and increase the heat to medium.
  3. Spread a little mayonnaise on 2 pieces of bread. Place them mayo-side-down into the skillet with melted butter.
  4. Spread 1 Tablespoon of Sriracha sauce and 4 bacon strip halves over one of the slices of bread. Then place a slice of cheese on top of each piece of bread.
  5. After 2-3 minutes, use a spatula to carefully lift the edge of the bread to see if it’s a nice golden brown color. Once it is, flip the piece of bread containing only the single slice of cheese on top of the other slice.
  6. Decrease the heat to low, and wait for the cheese to fully melt. Repeat for each sandwich. Slice in half to serve and enjoy!
