Chicken and Avocado are my two summer obsessions right now… I’ve had this salad at least 15 times in the last month I think, and the little tortilla garnish is a tasty addition that I HIGHLY recommend. The tortillas are brushed with oil and filled with garlic & Parmesan cheese, then placed directly on the grill- PHEW. I went to hand this luxurious delight over to my hubs but had to snatch it away at the last second and take a picture to share with you 😉 It’s almost too pretty to eat isn’t it!? (Nah.. nothing’s TOO pretty to eat…)

The spices on the avocado are what really make it delicious, and are the same types of spices that you’d put in guacamole (YUM)…

My husband has grown a TON of his own curly lettuce this year so it’s been easy to experiment with different salads, but this one definitely wins for the best of the best. Feel free to toss in cucumbers, peppers, olives, and different cheeses as well… and maybe a few crunchy croutons 😉

Avocado Chicken Caesar Salad

Serves: 1 salad
  • 1 small avocado, peeled & diced
  • 1 small chicken breast, marinaded in Caesar dressing & grilled or pan-seared
  • 1 heaping cup iceberg lettuce
  • 1 hard boiled egg
  • ½ cup cherry tomatoes, halved
  • ½ cup grated Parmesan cheese
  • 2 Tablespoons Caesar salad dressing
Spices for Avocado
  • Cumin
  • Garlic Powder
  • Garlic Salt
  • Cayenne pepper (optional)
Tortilla Bread Garnish
  • 2 mini tortillas
  • 2 Tablespoons olive oil
  • 1 Tablespoon minced garlic
  • ¼ cup grated Parmesan cheese
  1. Take the diced avocado & sprinkle lightly with each spice.
  2. Combine with all other salad ingredients & toss until well combined.
  3. For Tortilla garnish, brush each side of both tortillas with oil. Stack one on top of the other and in the middle of the two, brush on the garlic and sprinkle the cheese. Place directly on the grill or in the oven until each side crisp, flipping so each side is cooked. Slice into 4 triangles & place on the side of the salad plate 🙂
