So there’s this commercial that’s on TV all the time now, where this girl is having a crazy allergic reaction because she ate a brownie that had peanut butter in it. I have to start this by asking: have you tried those Easter M&M’s White Strawberry Shortcake yet!? I got myself a bag to make this recipe…now, just take it from me: Never buy just one bag. Trust me. You need one for the recipe, but, you need at least another bag for the house car ride home. AND, they’re only at Target, and only for a limited time. Let me start out by saying, these dreamy, creamy tarts look like heaven… but they were NOT heavenly to take pictures of. I’m gonna level with you. I eat pretty much all day long these days. I’m nearing my third trimester here and food is literally on my mind all the time. This is no problem, except that…well it’s considered bad form in the office if you’re chompin’ away in someone’s face during a morning meeting. It’s also considered bad form if you throw your notepad in their face just to make the meeting end faster so that you can go eat something. So having this fruit dip in the morning has pretty much saved my life…

HAPPPPPPY HOLIDAAAYYYSSSSS, from me to YOU! Can you even believe that Christmas is next week?! Because… I can not. For one, I live in New Hampshire and it hasn’t even snowed once. That’s crazy! And weird… just plain weird.
It hasn’t stopped us from enjoying our usual holiday traditions though 😉 Let’s see… we’ve…. watched Home Alone like, five times… haven’t started our Christmas shopping yet…. Put up the tree, made travel arrangements to see family, and made Christmas Cookies… (which is what brings you here..)!

Ugh. I have a bit of a cherry cheesecake problem right now. (Which is unfortunate for you if you don’t really like cherries…. Or cheesecake. Because this is my second cherry cheesecake recipe in a row. ) But listen! I’m pregnant. (Right? Sometimes, nothing hits the spot like good ol’ cheesecake. Who the HECK said that making fudge had to be hard?! I was done with this in 20 minutes and already had all of the (four) ingredients in the house to make it. WOOO! My only problem now is that it’s tasty as HECK. It tastes like it was hard to make. (No need to tell people that it’s not.)
The original recipe calls for walnuts but I decided that peanut butter was calling my name instead, so I chopped up some peanut butter cups and it worked like a charm. (Wonder what else you can toss in here?! Chopped up Snickers would be fabuloso….)

Aside from fudge, this cookbook has recipes for TONS of different sweet-tooth fixes. I like to flip through the big colorful pages and drool 😀
*Giveaway open to legal US residents only, open until Thursday November 12th, 12 am EST.
- 1 (14 oz.) can full-fat sweetened condensed milk
- 3 cups semi-sweet chocolate chips
- 1 teaspoon vanilla extract
- 1.5 cups diced peanut butter cups
- Line an 8x8 inch baking pan with foil, letting the sides drape over so you can easily lift out the fudge after it sets.
- In a medium saucepan, combine the chocolate chips and the condenced milk. Heat on medium, stirring constantly, until the mixture is smooth. (This takes a good 20 minutes or so.)
- Remove the pan from heat and mix in the vanilla and the peanut butter cups.
- Pour into the lined baking pan.
- Let it set in the fridge for 4 hours or at room temperature overnight.
- Use a sharp knife to cut it into 1-inch squares. If the fudge is cold, let it sit out for about 20 minutes before attempting to cut.
